Lemon Tofu/Chicken Soup #Recipe #vegetarian

Lemon Tofu soup is a light, refreshing soup that is healthy but also hearty. 
This is one of my favorite soups to make!


Ingredients
  • 2 carrots, diced
  • 4 ribs of celery, thinly sliced
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 2 packs firm tofu, grated
  • 1 Tsp salt
  • 1 Tsp pepper
  • 1/8 Tsp crushed red pepper flakes
  • 2 Tbsp butter
  • 6 cups chicken or veggie broth
  • 1 lemon, juiced and peel grated
  • 1 Tsp dried thyme
  • 3 Tbsp fresh dill
  • 1 cup noodles (any small kind)

Chicken Noodle Supper #recipe #onepotmeal


This is a quick and easy supper for any night of the week... a family favorite!


1 lb (500 g) skinless, boneless chicken breasts1 tbsp (15 mL) butter or margarine
1 tbsp (15 mL) vegetable oil1 large onion, finely chopped
1 cup (250 mL) sliced mushrooms1 clove garlic, finely chopped
1/2 tsp (2 mL) dried basil1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) salt1/2 tsp (2 mL) pepper
3 tbsp (45 mL) all-purpose flour3 cups (750 mL) milk
1 tbsp (15 mL) Dijon mustard3 cups (750 mL) egg noodles, uncooked
1 pkg (10 oz/300 g) frozen mixed vegetables1/4 cup yoghurt (optional)


Method:

In a large skillet, cook chicken in the butter and oil over medium heat for 5 minutes. Add onion, mushrooms, garlic, herbs, salt and pepper; cook until onion is tender. Stir in flour; cook for 1 minute.

Gradually add milk; cook and stir until sauce comes to a boil and thickens. Add mustard and noodles. Return to boil and simmer for 15 minutes, adding frozen vegetables after 10 minutes. Stir in yoghurt (optional) and serve with a pinch of Paprika.

Watermelon & Cucumber Salad #salad #vegetarian #recipe


Preparation time 10 minutes
Makes 12 Servings

Whenever I'm having someone over for a BBQ, this is an easy and quick salad to throw together. It's refreshing and feels like summer on a plate.

Ingredients:

2 English cucumbers 
1/4 large watermelon 
1/4 cup lime juice (3-4 limes) 
2/3 cup torn mint leaves 
2 tbsp tarragon leaves, finely chopped

My Famous Big Italian Meatballs #recipe


This is my famous Italian meatballs that I make for Christmas Eve dinner when I cook Italian food for the family. The men usually like to eat them on a nice big crusty bun with cheese, and the woman pair it with my vegetarian lasagna. I always make it a couple weeks prior, and freeze them until the morning of the event. I usually just pop them into the pot of hot spaghetti sauce to heat about an hour prior to when you want to eat. 

1/3 cup shallots finely chopped 
1 tbs. garlic, minced 
3 tbs. finely chopped fresh parsley 
1 cup Italian bread crumbs 
1/2 cup cold water 
2 tbs olive oil 
2 tsp. salt 
1/4 tbs. pepper 
1/4 tbs. nutmeg 
1 egg 
2 lbs beef 
Flour

This has to be one of my favorite old recipes that I've been making for years. It's been a while since I've made it, but I will be making this for Easter dinner this year. Not really the traditional ham or turkey, but an easy dish that can be prepped before hand. If you're planning on making this for company, prepare and make everything up until adding the pasta. You'd add the pasta close to the time you'd want to service it, to prevent the noodles from falling apart. If you're not fond of noodles, serve it over rice.

1 lb (450 g) boneless sirloin beef, cut into strips
2 tbsp (30 mL) butter
4 cups (1 L) sliced mushrooms
1 onion, chopped
1 tbsp (15 mL) paprika
3 tbsp (45 mL) all-purpose flour
4 cups (1 L) milk
1 cup (250 mL) beef stock
2 tbsp (30 mL) Dijon mustard
8 oz (250 g) curly broad egg noodles
2 cups (500 mL) frozen peas or mixed vegetables, thawed
1 cup (250 mL) sour cream (light or regular)
Salt and pepper, to taste
Chopped fresh dill or parsley, to taste

My Famous Italian Spaghetti Sauce #recipe


This is my personal recipe that I make the most out of all my recipes. It's my go to whenever I'm cooking for the family, especially New Years Eve dinner. This is better then any bottle of sauce... and I always double it and freeze some.


Ingredients:

2 Tbsp extra virgin olive oil
1 Large onion 
8 large cloves of garlic (minced) 
2 28-fl-oz/ 796 ml cans plum tomatoes 
3 whole roasted red peppers (chopped)
2 Tbsp chopped fresh basil 
1 Bay leaf

My mother made this recipe in the past and my daughter loved it... so I had to share it with you. Since it was a huge hit with the little Munchkin, I will be making this sometime next week. It's great for freezing, so I will be tripling the batch. The picture is from when my daughter was a toddler... she's now about to turn 8!

This has to be one of my families favorite soup recipes, especially during the winter months. It doesn't matter if you're a busy person, a mom, or a student... it's a soup that's easy on any budget, little prep, and perfect to set up before you head out for the day. It smells wonderful once you arrive home, and pairs nicely with a glass of red wine and garlic bread.

Ingredients:

1 lb ground beef
2 carrots, diced
4 celery stalks, diced
1 onion, diced (medium)
28 oz can crushed tomatoes
2  cans 14.5 oz beef broth
2 bay leaves
1 tsp dried oregano
