My Famous Big Italian Meatballs #recipe


This is my famous Italian meatballs that I make for Christmas Eve dinner when I cook Italian food for the family. The men usually like to eat them on a nice big crusty bun with cheese, and the woman pair it with my vegetarian lasagna. I always make it a couple weeks prior, and freeze them until the morning of the event. I usually just pop them into the pot of hot spaghetti sauce to heat about an hour prior to when you want to eat. 

1/3 cup shallots finely chopped 
1 tbs. garlic, minced 
3 tbs. finely chopped fresh parsley 
1 cup Italian bread crumbs 
1/2 cup cold water 
2 tbs olive oil 
2 tsp. salt 
1/4 tbs. pepper 
1/4 tbs. nutmeg 
1 egg 
2 lbs beef 
Flour
 
Method:
  1. Preheat oven to 325*F.
  2. Combine first 10 ingredients in blender and puree.
  3. Place meat in large bowl. Add the puree to the meat mixture and combine.
  4. Use spoon or ice cream scoop, scoop out meatballs. Form each ball by rolling in ur hands until tight and solid. (Balls should be smaller then a tennis ball, larger then golf ball)
  5. Toss lightly in flour to coat.
  6. Brown in olive oil. When meatballs are browned, remove from stovetop. Place in oven and bake for 30 min. Add to your favourite sauce.  

*** Try my italian spagetti sauce for this recipe...much better then canned***
