Weekend Recipe Blog Hop: Lentil Soup!

A great soup that is easy and delicious using the mighty "little" lentil! This is one of my favourite soup recipes that I never get sick of! It even freezes great.

3 cups vegetable stock
1 onion - diced
1 sweet potato - peeled and diced
2 carrots - diced
2 stalks celery - diced
1 19 oz / 540ml can lentils - drained and rinsed
1 tsp cumin
1/4 tsp - 1/2 tsp cayenne pepper
1 tbsp olive oil
salt to taste

1. Combine olive oil, onion, carrots, and celery. Cook for roughly  5 minutes to bring out the natural sugars in veggies.

2. Add sweet potato, lentils, cumin, and broth. Bring to a boil. Cover and simmer for at least 20 minutes.

3. Once all vegetables appear to be soft, puree. Add cayenne, and salt to taste. Serve!

**Start by adding a little cayenne at a time. I prefer my soup to be extra spicy, but you don't want to over do it.

Serving = 3/4 Beans, 1 Vegetables & Fruit
